We’re excited to share our newest coffee: Mexican Honey Prep – Medium Roast. Grown at 1,100–1,400 meters, this Typica and Bourbon varietal delivers rich cocoa notes, a heavy body, mild citrus, and a sweet finish.

So what makes it special? The honey process. After harvesting, the skin of the coffee cherry is removed, but some of the sticky fruit pulp (mucilage) is left on the bean while it dries. This “honey” layer adds natural sweetness and depth, creating a cup that’s smooth, bold, and complex.
